A classic dish called Chicken Amandine is made with soft chicken breasts cooked in a tasty almond-butter sauce. It's a classy and tasty dish that's great for any event.
Ingredients:
- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1/2 cup all-purpose flour
- 2 tablespoons olive oil
- 1/4 cup sliced almonds
- 2 tablespoons butter
- 2 tablespoons lemon juice
- 1/4 cup chicken broth
- 1 tablespoon chopped parsley for garnish
Instructions:
Season chicken breasts with salt and pepper
Coat chicken breasts in flour, shaking off any excess
Heat olive oil in a large skillet over medium-high heat
Cook chicken breasts until golden brown and cooked through, about 6-8 minutes per side
Remove from skillet and set aside
In the same skillet, add sliced almonds and toast until lightly golden, about 2-3 minutes
Add butter to the skillet and let it melt
Pour in lemon juice and chicken broth, stirring to combine and scraping up any browned bits from the bottom of the skillet
Return chicken breasts to the skillet, spooning the almond-butter sauce over them
Simmer for 2-3 minutes until the sauce thickens slightly
Serve chicken hot, garnished with chopped parsley
