Grapefruit and Avocado Winter Salad



This Winter Salad with Grapefruit and Avocado is bright and refreshing, and it's perfect for the cooler months. The sweet grapefruit, creamy avocado, and sour red onion make a great flavor combination. The fresh herbs, feta cheese, and toasted pecans give the salad texture and depth. It tastes great and is good for you. You can eat it for lunch or as a side dish at dinner.

Ingredients:

  • 2 grapefruits, peeled and segmented
  • 2 avocados, peeled, pitted, and diced
  • 1/2 red onion, thinly sliced
  • 4 cups mixed salad greens
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh mint
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped toasted pecans
  • Salt and pepper to taste

Instructions:

In a large salad bowl, combine the grapefruit segments, diced avocado, and thinly sliced red onion

Add the mixed salad greens, chopped cilantro, and chopped mint to the bowl

Gently toss all the ingredients together until well combined

Sprinkle the crumbled feta cheese and toasted pecans over the salad

Season with salt and pepper to taste

Serve immediately and enjoy!
