Keto Starbucks Lemon Loaf



Enjoy the tasty flavors of Starbucks Lemon Loaf without feeling bad about it. This keto-friendly version has the same sour lemon flavor and is soft and moist.

Ingredients:

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/3 cup erythritol or preferred keto-friendly sweetener
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 3 large eggs
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon vanilla extract
  • 1/4 cup heavy cream

Instructions:

Preheat oven to 350F 175C

Grease a loaf pan and line with parchment paper

In a large bowl, mix almond flour, coconut flour, erythritol, baking powder, and salt

In another bowl, whisk together melted butter, eggs, lemon juice, lemon zest, vanilla extract, and heavy cream

Pour wet ingredients into the dry ingredients and stir until well combined

Pour batter into the prepared loaf pan and smooth the top

Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean

Remove from oven and let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely

Slice and serve
