A filling beef stew that is great for a keto-friendly dinner. This slow cooker recipe is easy to make and tastes great. It has tender beef and low-carb vegetables.
Ingredients:
- 2 lbs beef stew meat
- 1 onion, diced
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 cup chopped celery
- 1 cup sliced mushrooms
- 1 cup chopped carrots
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons tomato paste
- 2 tablespoons olive oil
Instructions:
In a skillet, heat olive oil over medium heat
Add beef stew meat and brown on all sides
Transfer beef to the slow cooker
Add onions and garlic to the skillet and saut until translucent
Transfer onions and garlic to the slow cooker
Add remaining ingredients to the slow cooker and stir to combine
Cover and cook on low for 6-8 hours or until beef is tender
